
Go get yourself a mini waffle iron so you can make these waffles!
As we were setting up our latest apartment, my husband and I decided to purchase a mini waffle iron during one of our Target runs on a whim.
Boy, what a great decision.
Waffles are now something we have almost every weekend and have even started freezing to have later on in the week. They’re crispy on the outside, fluffy on the inside, and bound to make your morning!
A few notes:
- Warm your milk: Warming your milk for just 30 seconds before adding the melted butter will help the butter distribute better throughout the batter and lead to a better texture and flavor.
- Waffle iron: We have this Dash Mini Waffle Maker but this recipe will obviously work just as well on a regular waffle iron.
- Pause in between waffles: Give the waffle iron a few seconds to reheat in between waffles. This way, you’ll end up with an even crispier exterior.
- Add toppings: We happen to prefer these plain, however, feel free to add in things like chocolate chips or blueberries if you want some variety. If I have it around, I also will eat these slathered in my Homemade Nutella.
- Freeze for later: Double the recipe and freeze some waffles for later! We just started doing this and being able to pull out a homemade waffle for a snack during the week has been a game changer. Just let the waffles cool to room temperature and place in a plastic bag in your freezer. Pop the frozen waffle in the toaster and enjoy whenever you want!
- Make them protein waffles: Sub a 1/2 cup of flour for 1/2 cup of protein powder (my favorite is this unsweetened and unflavored Orgain protein powder) and you have tasty protein waffles you can make ahead as a snack for the week!

Mini Waffles
These have been a recent obsession in our household. We love having them on the weekends as well as making extra to freeze and have throughout the week as a toasted snack!
Equipment
- Waffle iron
Ingredients
- 1 ⅛ cups AP Flour (1/8 Cup = 2 Tbsp)
- 2 Tbsp Sugar
- 1½ tsp Baking powder
- ½ tsp Salt
- 1 Cup Milk warmed
- ¼ Cup Unsalted butter melted
- 1 Egg
- 1 tsp Vanilla extract
Instructions
- Preheat waffle iron.
- Warm your milk in the microwave for 30 seconds and set aside. Melt your butter in the microwave and set aside.1 Cup Milk, ¼ Cup Unsalted butter
- Into a medium mixing bowl, add the flour, sugar, baking powder, and salt. Mix and set aside.1 ⅛ cups AP Flour, 2 Tbsp Sugar, 1½ tsp Baking powder, ½ tsp Salt
- Combine your milk, melted butter, egg and vanilla, in a small mixing bowl, whisking well after each addition.1 Egg, 1 tsp Vanilla extract
- Pour your wet ingredients into your dry ingredients and mix until combined.
- Spray down your waffle iron with cooking spray and add 1/4 cup of batter for each waffle. I use a single serving waffle iron so this is the right ratio for my set up, but feel free to adjust based on the size of your iron.
- Cook until golden brown, about 3-4 minutes. Place on a wire rack until ready to serve. Note: this ensures they stay crisp!
- Serve with maple syrup and butter or just enjoy them on their own!

I love making waffles in my mini waffle iron! What do you think about substituting peanut butter powder for half the AP Flour?
Seems like another good way to sub in more protein! And peanut butter waffles sound delicious.
