
I prefer these oat flour blender pancakes over your standard pancake recipe.
Already gluten free and easily made vegan, these oat flour blender pancakes are a delicious and nutritious start to your weekend. The oat flour actually keeps you full the whole morning and they’re naturally sweetened by banana (and just a splash of maple syrup) so you don’t feel like you’re starting off the day with a sugar bomb. Try adding some blueberries or chocolate chips or experiment with your own favorite flavors!
A few notes:
- Preheat your pan: The key to a perfectly golden pancake is a preheated pan. While the pancake batter thickens, heat the frying pan over medium low heat so it’s ready to go!
- Add your favorite toppings: We tend to make half of these with blueberries and the other half with chocolate chips. Feel free to experiment with other flavors such as bananas, walnuts, or even some homemade Nutella.
- Make it Vegan: By using oat flour instead of wheat flour, these oat flour blender pancakes are already gluten free but with a few simple swaps you can make them vegan as well! Use a dairy free milk and swap the egg for 1-2 tablespoons of unsweetened apple sauce.

Ingredients
Pancake Batter
- 1 Cup Oat Flour
- ½ Cup Milk dairy or non-dairy
- ½ Banana ripe
- 1 Egg
- ½ Tbsp Maple syrup (½ Tbsp = 1.5 tsp)
- ½ tsp Baking powder
- ½ tsp Cinnamon
- ½ tsp Vanilla
- ¼ tsp Baking soda
- ⅛ tsp Salt
Toppings
- Blueberries
- Chocolate Chips
- Syrup
- Butter
Instructions
- Add the milk, banana, egg, maple syrup, baking powder, cinnamon, vanilla, baking soda, and salt to a blender. Blend to combine, about 1 minute.½ Cup Milk, ½ Banana, 1 Egg, ½ Tbsp Maple syrup, ½ tsp Baking powder, ½ tsp Cinnamon, ½ tsp Vanilla, ¼ tsp Baking soda, ⅛ tsp Salt
- Add the oat flour and blend again. Let sit for 5 minutes to thicken.1 Cup Oat Flour
- While the batter thickens, preheat a large frying pan and gather toppings.
- Grease the pan with butter or non-stick spray and pour about 1/4 cup of batter per pancake. Add toppings like blueberries or chocolate chips to each pancake.
- Let cook for about 2 minutes or until golden brown and then flip.
- Serve with syrup or enjoy as is!
