Strawberry shortcake is the quintessential summer dessert, combining the freshness of juicy strawberries with the richness of whipped cream and buttery, flaky biscuits. It’s a dessert that strikes the perfect balance between light and indulgent, offering a delightful mix of textures and flavors. Whether served for a special occasion or as a casual treat, strawberry shortcake is always a crowd-pleaser, bringing together simple, seasonal ingredients for an irresistible, classic favorite.
A few notes:
- Make your own biscuits: While store bought poundcake or canned biscuits are always an option when putting together a strawberry shortcake, nothing will ever beat homemade biscuits. Here’s my go-to recipe for homemade biscuits.
- Be intentional with the sugar: One of my favorite things about this recipe is that it is not overly sweet. I prefer to have most of that sweetness come from strawberries, that hopefully are sweet enough on their own, but if not, I’ll add a teaspoon or so of additional sugar. Because of this, I do not sweeten the whipped cream and you’ll find that my biscuits are only lightly sweetened as well. I find this to be the best balance of flavors but of course you can play around and adjust to your liking.

Strawberry Shortcake
This classic strawberry shortcake features flaky, buttery biscuits layered with sweet, juicy strawberries and fresh whipped cream. It's the perfect dessert for showcasing ripe strawberries in the summer but can still be enjoyed all year round.

- Hand or Stand Mixer
Ingredients
- 2 Biscuits
- 1 Cup Heavy whipping cream
- Splash of Vanilla
- 8-10 Medium strawberries
- 1 tsp Sugar
Instructions
Ingredient Prep
- Bake a batch of homemade biscuits. You'll need one biscuit per strawberry shortcake serving.2 Biscuits
- Slice strawberries into desired size (I would recommend quarters or smaller) and place in a small bowl. Optional: Add sugar until you reach desired sweetness level and let macerate.8-10 Medium strawberries, 1 tsp Sugar
- Pour whipping cream into a medium bowl or the bowl of a stand mixer. Add a splash of vanilla and whip until stiff peaks form.1 Cup Heavy whipping cream, Splash of Vanilla
Build your shortcakes
- Pull apart a biscuit apart into two pieces and place on a plate.
- Layer with macerated strawberries and whipped cream to taste.
- Repeat for each additional shortcake.
